Gundam is a massive franchise spanning many generations of books, shows, and of course, giant robots. First and foremost- You do not have to watch every single show ever to enjoy Gunpla. There are, no joke, over 50 full-length Gundam series, not to mention all the movies, OVAs, and novels. Here's a couple I recommend starting with.

Mobile Suit Gundam: the Witch from Mercury

The reason Gundam Witch is good to watch right now is because it's still airing weekly. You'll know just about as much about the series as anyone else! It also takes place in it's own self-contained universe so you don't need to watch anything before it. Gundam Witch follows Suletta Mercury (the first female gundam protagonist and the pilot of Gundam Aerial) and her fiance, Miorine Rembran, as they manage their company and fight their way to the top.

Mobile Suit Gundam: 0079

0079 (also called original Gundam or just Gundam) was the first Gundam show to be released, in 1979 (hence the name). It follows Amuro Ray, the pilot of RX-78-2, as he navigates the war between the rebel space colony Principality of Zeon and the Earth Federation. It takes place in the Universal Centry timeline. You can watch either the original 48 episode anime, or the 3 compilation movies.
